Past Contestant Talks About NTD’s Global Chinese Culinary Competition

This year NTD will host its 5th Global Chinese Culinary Competition. The Asia-Pacific preliminary rounds start in less than two weeks at the Expo Dome in Taipei.
今年新唐人將主辦第五屆全球華人廚技大賽，亞太初賽不到二個禮拜就要在臺北爭艷館開始了。
Chef and restaurant owner, Mi Guoqing, was one of last year’s participants. Mi recalls his experience.
餐館老闆兼主廚米國慶，是去年的參賽者之一。米國慶回憶他的經驗。
[Mi Guoqing, Chef/Restaurant Owner]:
“(The competition) really tests one’s ability to be calm and one’s endurance from picking ingredients to handling, and to finishing. I was too arrogant last year. I had endurance, but what was missing was my ability to be calm.”
米國慶說：「比賽真的能測出一個人保持鎮定的能力，還有從挑食材到料理的定性能力。我去年太自大了，耐性是有，但是少了保持鎮靜的定性能力。」
Mi speaks about the lessons he gleaned from the judges.
米說到他從裁判那兒學到的教訓。
[Mi Guoqing, Chef/Restaurant Owner]:
“NTD is more careful, in terms of how each dish is judged and how they treat each chef. As long as the chef has problems, or if the chef thinks he doesn’t know why he didn’t get picked, the judges will give a very careful, detailed, and convincing explanation.”
米國慶說：「新唐人是更仔細的，就每一道菜如何被評審，以及他們如何對待每一位廚師，只要廚師有問題，或是廚師認為他不知道為何沒有被挑選上，裁判們都會給一個嚴謹的、詳細的、並且很有說服力的解釋。」
Mi remembers his mistake last year—forgetting to cut open the back of the shrimp.
米師父記得他去年犯的錯誤是：忘掉開大蝦的背。
He’s ready to face the challenge of the ‘Friend Shrimp’ dish again this year—but with a more steady heart.
他準備今年再度挑戰「乾燒大蝦」─但是會以一顆更沈穩的心。
[Mi Guoqing, Chef/Restaurant Owner]:
“Whether or not it wins a title, or if it becomes one of the final selections is unimportant, at least I’m participating.”
米國慶說：「是否得獎，或是否晉入決賽，並不重要，至少我參與了。」
‘Friend Shrimp’ is a dish selected as the Asia-Pacific à la carte menu.
「乾燒大蝦」是亞太初賽的自選菜。
This year the Asia-Pacific preliminary rounds will take place in Taiwan from June 15th to 17th. The North American preliminaries and finals will be held on New York’s Times Square in September.
今年亞太初賽將自6月15日到17日，在台灣舉行。北美初賽與決賽將會在九月份於紐約時代廣場舉行。
